One thing to consider I believe a regular Adobe licence allows you to install on one Windows machine plus one Mac but not use them at the same time.
How well that would fit in the workflow is another matter. If all it will do is render video, I'd be tempted to build a small PC with an i7 of some description and a decent GPU. We have a wide variety of Macs and PCs for video work and having compared similar machines side by side with he main difference being the GPU, I can say it makes a significant difference. This will be a limiting factor in transcoding but just as important will be the lack of a decent GPU which Media Encoder uses to accelerate rendering. Am I right in thinking the Mac Mini doesn't have a quad core option any more?
